To convert an oven temperature, use °C = (°F − 32) × 5 ÷ 9. So 350°F = 177°C, which sits at gas mark 4 — a “moderate oven” used for most cakes and roasts. Going the other way, °F = °C × 9 ÷ 5 + 32, and 200°C ≈ 400°F ≈ gas mark 6.

Why oven temperatures come in three scales

US recipes give oven heat in Fahrenheit, most of the world uses Celsius, and older British recipes and gas ovens use a gas mark — a numbered dial from ¼ up to 9. The two temperature scales convert exactly with a formula, while gas marks map to a fixed table of roughly equal steps of about 25°F (14°C) each. This tool shows all three at once so you can follow any recipe on any oven.

Worked example

A recipe calls for a 350°F oven, but your dial is in Celsius.

    Subtract 32 from the Fahrenheit value. 350 − 32 = 318.

    Multiply by 5 ÷ 9. 318 × 5 ÷ 9 = 176.67, so 350°F ≈ 177°C.

    Round to a sensible dial setting. Ovens are not precise, so 177°C rounds to the common 180°C mark.

Fan ovens and other pitfalls

Fan (convection) ovens run hotter. The moving air cooks faster, so a fan oven set to the same number browns and dries food more. The usual rule is to reduce the conventional temperature by about 20°C (or roughly 25°F) — so a 180°C recipe becomes 160°C fan. Some recipes label this “180°C / 160°C fan / gas 4”.

Gas marks are approximate. The table maps each mark to a rounded dial temperature, not an exact conversion. An exact 180°C is 356°F, but the chart lists gas 4 as 350°F because that is the standard marking. For cooking, these small differences do not matter.

Round to your dial. Home ovens swing by 10–15°C during use and rarely match the dial exactly. Convert, round to the nearest 5 or 10 degrees your oven offers, and rely on colour, timing, and a thermometer rather than the exact figure.

What temperature is gas mark 4?
Gas mark 4 is about 180°C or 350°F — a “moderate oven”. It is the most common setting for cakes, biscuits, and many roasts, which is why so many recipes default to it.
Do I adjust the temperature for a fan oven?
Yes. A fan (convection) oven circulates hot air and cooks faster, so reduce the conventional temperature by about 20°C — roughly 25°F. A recipe’s 200°C becomes about 180°C in a fan oven.
How do I convert Fahrenheit to Celsius for an oven?
Use °C = (°F − 32) × 5 ÷ 9. For example, 400°F − 32 = 368, and 368 × 5 ÷ 9 ≈ 204°C, which rounds to the common 200°C dial setting.
How do I convert Celsius to Fahrenheit?
Use °F = °C × 9 ÷ 5 + 32. So 220°C × 9 ÷ 5 = 396, plus 32 = 428°F, which matches the gas mark 7 / 425°F setting on the chart.
Why does an exact conversion not match the gas-mark chart?
The chart rounds each mark to a tidy dial temperature rather than an exact conversion. An exact 180°C is 356°F, but gas 4 is listed as 350°F. The difference is too small to affect cooking.
What is a “moderate” oven?
A moderate oven is roughly 180°C, 350°F, or gas mark 4. “Cool” is around 140–150°C (gas 1–2), and “hot” is about 220°C, 425°F, or gas 7.
